2 eggs, whisked
7oz. of Augusta's JalapenoPimento Cheese
1 tablespoon grated onion
1 box of Jiffy Corn Muffin Mix
1 small can of whole kernel yellow corn, drained
Spray iron skillet with oil or line muffin pan with paper cups.
Combine all ingredients in the order indicated and pour into baking dish.
Bake at 350 degrees for 20-25 minutes.
Top cooled cornbread cupcake with a dollop of Augusta's Jalapeno Pimento Cheese.
